While we’re not attempting to find an answer, it does pay to know the pros and cons of both so that buyers will find it easier to make a choice when shopping for barbecues. Charcoal There’s something to be said about starting a fire from scratch and building it up so that it’s hot enough to cook over. This is one of the main points supporters of charcoal grills will state when asked why they prefer them over gas. Another advantage is the smoky flavor so associated with grilling. Steaks, in particular, emit a taste that’s hard to ape with other barbecues. On the flip side, cooking with charcoal grills takes time as one needs to wait for the fire to be at its hottest. The heat can be controlled, unlike charcoal barbecues, and you don’t need to keep a constant watch on the food.
