Seafood BBQs
Seafood on BBQs is popular in many cultures but not as much as it should be in North America, this is a shame though, many types of seafood cook brilliantly on a BBQ with the smoke really adding to the delicate flavors.
Smoked fish like salmon, trout and mackerel are popular and you get a similar effect by cooking them from raw on the BBQ but the fresh smoked taste will be more intense.
Other seafood such as octopus and squid which have a mild flavor pick up the flavors of the BBQ well, they are ideal as part of a seafood kebab. Prawns of course are great as part of a kebab or simply cooked on a skewer, cook whole unpeeled king prawns for maximum flavor and a much brighter orange/pink color than you will get from ready peeled prawns.
You can of course grill whole fish on a BBQ, grilled Red Tilapia is a popular dish in Jamaica. Fish steaks from shark, swordfish and tuna cook well on BBQs as well of course and should be firm enough to not disintegrate, with shark and swordfish use steaks still held together with the skin to stop them falling apart.
